Most Nigerian restaurants are managed with pen, paper, and a group chat.

An order is written on a notepad, torn off, and walked to the kitchen. The kitchen shouts back when it is ready. Payment is collected in cash or by asking the customer to make a transfer while the cashier waits for an alert. The day's revenue is counted from the till drawer at closing. Wastage is estimated. Stock levels are a guess until something runs out mid-service.

This is not a small restaurant problem. It happens at full-service restaurants with twelve tables, fast food outlets with fifty customers an hour, and hotel kitchens serving three outlets from one production kitchen. The system breaks under volume, breaks under staff turnover, and breaks the moment the person who keeps it in their head is absent.
